My brother's fiance mentioned in passing a few weeks ago that her Grandad adores Christmas cake but unfortunately cannot indulge in the delicacy as he is diabetic. We chatted about the possibility of baking a sugar-free Christmas Cake and, while I had no doubt that it was possible, I genuinely believed that it would be rubbish in comparison to the real deal.
Enter this sugar-free revelation.
Made with absolutely NO sweeteners, either refined or natural, and also free from gluten and dairy. As a bonus, it's also free from nasty fats as it only uses a tiny amount of Extra Virgin Olive Oil instead of butter or margarine! Wow!
If it weren't for the fact that this bad boy has some non-negotiable brandy added, it would actually be Paleo! Imagine ... almost paleo Christmas Cake!
